Dominic's Italian heritage & lifetime of making red wine each year with his father & cousins inspired the purchase in 2017 of a little vineyard with established Viognier vines that were in need of love.
With a plan to adopt traditional Italian farming, ground improvement started, introducing lime & gypsum also ground shaping true to traditional Italian farming.

Undecided on varieties he established some mentors, his research through TAFE & workplaces led him to choose some classic Hunter & Italian varieties not yet common in the area. The north block involved a test with a rootstock advised by a viticulturist. In 2018 Paulsen rootstocks were planted in the first four rows, they took off like triffids and have now also been grafted with Temprinillo in 2021. Nero D'Avola & Pecorino purchases were also grafted on Paulsen rootstock & planted in 2021.
In the southern block, an Italian variety Negroamaro & Shiraz also grafted on Paulsen rootstock & planted in 2020. The shiraz clone planted are from cuttings imported by James Busby. Busby is regarded as the father of the Australian wine industry, as he was the first to bring vines to Australia from Spain & Hermitage France which were originally planted down the road on Busby Lane.
A personal passion of growing & maintaining these vines will lead to a quality wine hitting the palate at many gatherings be it in the vineyard, cellar door, or a family dinner with friends. The Italian motto of to eat well is to live well, Ziliotto motto is to drink well is to live better! There will be many occasions each season for community, family and friends to come and be part of the production of wine, and enjoy the Italian traditions, Salute.
